You can prevent editing of existing data by either double-clicking on a data column or choosing Column Options / Column Definition Tab from the Data Menu and checking the box Lock Column (prevent cell editing).

This option is also available when creating new data columns. Choose New Manual Column from the Data Menu and check the Lock Column box.
